15 minute Avocado Dressing with Zucchini Noodles
If you're trying to eat healthier and haven't had zucchini noodles/pasta...Now is the time to start! All you need is a cheese grater a couple zucchinis and a gigantic bowl because you're going to want to eat a lot of them. Especially when you could eat about 16oz (that's a pound!) For under 80 calories and 17 carbs. They're super delicious, will keep you full, slim and healthy.
So, let's get started!
Ingredients
1⁄4 cup
fresh basil leaves
1 medium
ripe avocado, halved and pitted
21⁄2 tbsp
lemon juice, approx. half a lemon
1 clove
garlic, peeled and quartered
1⁄2 tsp
kosher salt
2 tbsp
olive oil
2 tbsp
water
2 tsp
nutritional yeast
1⁄4 tsp
Salt and pepper to taste

Zuccinis
Blend all of the ingredients in a food processor or quality blender (like a blendtec, bullet or any other blender that can make "sauces) on medium until smooth.
That's it. You're done!
Grate your zucchinis. Now, you can put them in a pan with 1/2 cup salt water and cook until soft, stirring occasionally - or - you can stick them in the microwave in a microwave safe container with the lid on, but not sealed (so steam can escape). For 2 minutes, with 1/3 cup salt water. Then drain.
This is ment to be a chilled dish, so put your noodles and sauce in the fridge for 30 minutes.
Mix all ingredients in a large bowl, dress with your favorite veggies and parm! I like tomatoes on mine :)
