Simple Avocado Edamame Cilantro Dressing
So there's two ways to do this - one is for my lazy friends and one is for my extra friends. When I'm feeling lazy, I'll mash up the avocado and other ingredients. If I'm feeling extra, I'll get out the bullet and blend this dressing up w/ edemame for a richer consistency. You better believe when you're working out and losing body fat (which is controlled starvation, btw) you want the food you DO eat to be full of antioxidants, vitamins, minerals and flavor.
2 medium ripe avocado, halved and pitted
2 limes, squeezed
1 clove garlic, peeled and quartered
3/4 cup edamame
1⁄2 tsp salt
2 tbsp water
salt and pepper to taste
blend all ingredients in a blender or food processor until smooth
Mince garlic and mash avocado, combine all ingredients in bowl and mix until incorporated into a desired consistency.
Pour over your favorite salad, veggies, or veggie noodles (my favorite!).
